Apple Pie Quinoa Bowl
APPLE PIE for breakfast! Say whaaat???
It’s true, you can have your pie and eat it too with our Apple Pie Quinoa bowl! The quinoa in this bowl will keep you feeling full throughout your morning and provide you with the fuel you need to power through the day! Easy to make and loaded with flavor, it’s a must try!
1 cup quinoa, rinsed
2 cups milk
¼ cup unsweetened applesauce
¾ tsp cinnamon
½ tsp nutmeg
1 tsp vanilla extract
Pinch of salt
2 medium apples, shredded
Optional toppings: 100% pure maple syrup, walnuts, almonds
1. Bring quinoa, almond milk, and applesauce to a boil in medium pot.
2. Reduce to simmer and continue to cook for 15 minutes until liquid is absorbed.
3. Stir in cinnamon, nutmeg, vanilla and salt. Pour into bowls and top with shredded apples and a drizzle of maple syrup if desired.
Makes 4 servings.
