Meet the Team

Meredith Lapp, BA(Hons), BSc, RD

Meredith is an outgoing and approachable registered dietitian committed to making emerging nutrition research relevant, useful, and memorable for people of all ages. Originally from Toronto, Meredith holds a BA(Hons) from the University of King’s College. After varied early career experience in event planning, acting, children’s camps, and resume counselling, Meredith found her passion for fitness and nutrition while training for her first Bluenose 10k and half marathon (21km) races, and returned to school to pursue dietetic training (BSc, RD) at Mount Saint Vincent University. She completed her internship experience at the Canadian Diabetes Association, Camp Morton (a summer camp for teens with Type 1 diabetes), and two long-term care centres. Meredith has particular interest in sports nutrition and strongly encourages women to incorporate weightlifting into their fitness regimens. Meredith’s nutrition philosophy centres around a “back to basics” whole food approach: choosing the right foods, at the right times, in the right portions. Living with a severe peanut allergy herself, Meredith is familiar with the lifelong challenges that go along with food-related limitations, and she enjoys helping clients find sustainable solutions to similar restrictions. Meredith’s favourite Simply For Life dish is the White Bean Tabbouleh (a hearty grain salad with Mediterranean flavours); you’ll find it on all her client menus, and often in her lunch bag!

Joan Shepard, P.Dt

Joan holds a Bachelor of Science in Foods and Nutrition from Acadia University. Her work experience in Dietetics and Nutrition spans 30+ years, working in Edmonton at the Royal Alexandra Hospital counselling patients as a Clinical Dietitian, moving to Charlottetown to the Queen Elizabeth Hospital and working in Food Service Management developing patient menus and recipes, moving to Aramark in Toronto as Regional Dietitian and Dietetic Internship Director responsible for ensuring Dietitians across Ontario were trained and performing as food service Managers, and most recently Directed the Food Service of a large Long Term Care Centre in eastern Ontario. While working in Long Term Care, Joan was asked to develop the 6 courses in the Food Service Worker Certificate Program at a well known Community College. This program has reached over 10,000 students training them for successful food service careers in Long Term Care. Joan continues to instruct online nutrition courses in this program and has a passion for teaching and helping others. Following a very successful career in Dietetics, Joan moved to Halifax in November, 2016 to be with family. She has now joined the Simply For Life team to utilize her skills to help others achieve their health goals. Joan has personal experience understanding the challenges of weight loss and the individual strategies and commitment required to achieve weight management. The combination of studies in nutrition, experience with clients of different demographics working to achieve weight loss and maintenance goals, as well as personal success in overcoming obstacles to weight loss have allowed Joan to have a fulsome appreciation of client needs, challenges and obstacles. In her spare time, she loves to cook and try new recipes. She also enjoys baking, and is always searching for healthier options, or modifying existing recipes. She enjoys crafts including cross stitch and sewing, and is hoping to learn to quilt. Joan enjoys refinishing furniture and loves collecting vintage brooches, which you will see her wearing. Joan loves spending time with her family and pets. Joan’s sister is her best friend. She enjoys playing games with her young nephews, and loves exploring with them. Joan loves dogs, and has owned Shelties and a Shipoo. She has enjoyed travelling extensively including Europe, Mexico, most Caribbean destinations, and of course Canada and the USA. Her favourite destinations are the Canadian Rockies, Eastern Canada, the beaches of Normandy, the Azores, Florence, Lucerne and the Alsace region of France. She takes particular interest in the beautiful scenery, diverse cuisine, and immersing herself in the local culture. She regularly participates in group fitness classes especially strength and cardio training. The energy of the Instructor and class participants motivates her to challenge herself. Joan is looking forward to summer and exploring this beautiful province, and its beaches. Maybe you will see her walking along the shoreline!

Kirsten Swantee, Nutrition Advisor

Kirsten is originally from St. John’s, where she studied Biochemistry for two years at Memorial University of Newfoundland, before moving to Nova Scotia to complete her Bachelor of Science in Nutrition at Acadia University. She completed her dietetic practicum experience in the Annapolis Valley with rotations in community health, long term care, hospital food service management, and clinical nutrition; working with outpatients, inpatients and in diabetes education. Kirsten is passionate about food, loves cooking, trying new recipes and enjoying the great restaurants around the Halifax area, while connecting with family and friends. She believes in eating real, whole foods, balanced meals, and that, in moderation, anything can fit into a healthy diet. Kirsten enjoys nutrition counselling because each client is so unique. She uses a personalized approach to nutrition counselling, through careful listening and the ability to simplify the complexities of the nutrition world to create a practical and realistic plan for making healthy changes. Working with people with different backgrounds, lifestyles and goals makes nutrition counselling challenging, exciting and very rewarding. Kirsten is genuine, conscientious and practices being grateful for everything in her life. She has gained valuable work experience in retail, customer service and promotions and has especially enjoyed volunteering opportunities to give a little back. Kirsten enjoys activities such as hiking and yoga, likes fashion and loves organization – especially in her refrigerator and her closet!
