Meredith is an outgoing and approachable registered dietitian committed to making emerging nutrition research relevant, useful, and memorable. She is mom to a very energetic toddler, counsels full-time at Simply For Life, and takes a realistic approach to fitting food prep, fitness, and self-care into her clients’ busy lifestyles! She was recognized nationally as a Simply For Life Top Consultant in 2019. Meredith’s nutrition philosophy centres around a “back to basics” whole food approach: choosing the right foods, at the right times, in the right portions. Living with a severe peanut allergy herself, Meredith is familiar with the lifelong challenges that go along with food-related limitations, and she enjoys helping clients find sustainable solutions to similar restrictions. Meredith has particular interest in sports nutrition and strongly encourages women to incorporate weightlifting into their fitness regimens. Originally from Toronto, Meredith holds a BA(Hons) from the University of King’s College.
After varied early career experience in event planning, acting, children’s camps, and resume counselling, Meredith found her passion for fitness and nutrition while training for her first Bluenose 10k and half marathon (21km) races, and returned to school to pursue dietetic training (BSc, RD) at Mount Saint Vincent University. She completed her internship experience at the Canadian Diabetes Association, Camp Morton (a summer camp for teens with Type 1 diabetes), and two long-term care centres. Meredith’s favourite food is pickles! Her family’s favourite Simply For Life recipes include the Keto Shepherd’s Pie, Mila’s Banana Egg Pancakes, Chicken & Wild Rice Soup, Red Lentil Curry and – of course – the Easy as 1,2,3 Energy Bites.

Hi! I am Theresa and my interest in nutrition started when I was an overweight teen. I was fatigued all the time and hated the way my body looked. Years and years of trial and error showed me what worked best for my long term health and energy. I made a lot of mistakes along the way!
During pregnancy and raising my children the stakes were even higher. I wanted to find the best way to nourish my children so they would have energy and clear minds to learn. I didn’t want them to have to deal with the health challenges I had as a kid. I also learned an awful lot about animal nutrition so I could keep my furry children healthy too.
In 2013, I became a resistance training leader and inspired people to use weight training as a part of their lifestyle changes. I also found that daily exercise kept my mood stable and was an integral part of my weight management goals. The following year I began training with the Canadian School of Natural Nutrition to become a holistic nutritional consultant. I finally had credentials to back up the years of experience and research I had behind me. I worked with naturopathic doctors to improve the lives of patients. While the doctors would set out a specific plan for their patients, I would be available to develop and share recipes and meal plans that could help them achieve their health goals.
I grew up in Nova Scotia and then lived in Europe and out west. I can honestly say Nova Scotia is the most beautiful place in the world. In my spare time, I love to take my kayak out on any of the many lakes in the area. I’m an avid reader and crafter. I live with two cats and three dogs. Hanging with the beasts makes me happy. Every chance I get I play with horses!

Kirsten is originally from St. John’s, where she studied Biochemistry for two years at Memorial University of Newfoundland, before moving to Nova Scotia to complete her Bachelor of Science in Nutrition at Acadia University. She is a Dietitian registered with the Nova Scotia Dietetic Association. Kirsten is passionate about food, loves cooking, trying new recipes and enjoying the great restaurants around the Halifax area, while connecting with family and friends.
